Maji Kitchen operates on a foundational premise: that every ingredient entering a body mid-recovery either accelerates the process or interferes with it. There are no neutral choices. The kitchen is built around whole, minimally processed ingredients sourced globally for their specific biological properties — anti-inflammatory compounds, bioavailable micronutrients, prebiotic fibre, essential amino acids, and phytonutrients that work in concert with the thermal recovery already underway.

The menu reflects cross-continental wellness wisdom: Japanese longevity principles inform the use of fermented ingredients and precise portioning; Mediterranean anti-inflammatory cuisine drives the selection of cold-pressed olive oils and wild-caught seafood; Ayurvedic and traditional Chinese medicine inform the herbal profiles of our tea and infusion programme.

Restorative Small Plates

Miso broth with black garlic and fermented ginger. Poke bowls built on brown rice with wild-caught yellowfin and wakame seaweed. Cold-pressed avocado on sprouted grain with micro herbs and yuzu. Organic edamame with black sesame paste. Each plate is calibrated to replenish electrolytes and amino acids lost through heavy thermal sweating.

Slow-roasted wild salmon with turmeric-tahini glaze and grilled asparagus. Grass-fed beef with bone broth reduction and fermented cabbage. Roasted golden cauliflower steak with cashew miso and pomegranate. Pad Thai rebuilt with shirataki noodles, organic tofu, and raw coconut aminos. Every protein is wild-caught, grass-fed, or organic — no factory farm shortcuts.

Organic single-origin arabica sourced from high-altitude farms in northern Thailand and Ethiopia. Prepared through manual pourover, AeroPress, and cold brew methods to preserve the full polyphenol and chlorogenic acid content. Paired with house-made oat, macadamia, and coconut alternative milks. Espresso served with still mineral water and a small complimentary piece of 85% cacao.

A curated selection chosen for quality and origin above volume. Natural and biodynamic wines from Burgundy, Piedmont, and the Clare Valley. Japanese whisky from Yamazaki and Nikka. Aged tequila añejo and mezcal for the resveratrol-inclined. Craft gin infusions made in-house with regional botanicals. The spirits list reflects the same philosophy as the food menu: quality without compromise.

Maji Kitchen's herbal infusion programme draws from Ayurvedic, traditional Chinese, and Southeast Asian botanical medicine to offer a selection of targeted therapeutic infusions calibrated to the specific biological needs of the post-thermal body.

Each infusion is prepared fresh from whole-dried herbs using traditional steeping protocols that preserve the full spectrum of secondary metabolites. The programme is designed not as wellness theatre but as functional intervention — infusions prescribed by our wellness consultants based on the guest's thermal history and recovery goals for the session.
